What type of customization is supported for the profile pages? We want to use the profile page as an interactive resume, where we can highlight development blogs and projects. Is this possible?

The customization of user profiles is currently only available to Enterprise clients. 

A workaround could be customizing the name of the content types (e.g renaming quick post to portfolio). This way your users can add their portfolio and when I go to a user profile, I can see their portfolio in the profile.
